BBQ Flank Steak and Avocado Won Ton Cups

Coastal Crab Cakes

1 lb. Crab- Claw Meat, picked through for shell fragments
1/3 c diced red bell pepper
1/3 c sliced green onion
1/2 Tab parsley
1/2 Tab Dijon mustard
1/2 tsp Worchestershire sauce
1 tsp lemon juice
1/3 c plain breadcrumbs
2 Tab melted butter
1/2 tsp paprika
1/4 tsp cayenne
1 egg – beaten

Mix all ingredients together, form into patties. Refrigerate for at least 3 hours, then coat the outside with finely crushed potato chips.

Saute in melted butter on medium high for 5 minutes per side. Use about 1 Tab melted butter for each patty.

I like to cheat- I serve them with Jalapeno ranch dip- Litehouse brand
